Banana oat muffins

Ingredients:

  • 1 cup oats
  • 1 cup oat flour (blend oats in your blender)
  • 1/4 cup cane sugar or coconut sugar
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 3 tbsp ground flax seeds
  • 1/2 tsp salt
  • 2 eggs
  • 1/4 cup melted coconut oil
  • 1 cup mashed bananas
  • 1 cup unsweetened apple sauce
  • 1/4 chopped pecans

Instructions:

  1. Preheat oven to 180°C and place muffin cups in a muffin tin (makes 12).
  2. Combine dry ingredients in a large bowl.
  3. Whisk together eggs, melted oil, bananas and apple cause in a medium bowl.
  4. Add wet ingredients to dry ingredients and gently mix together until moistened. Don’t overmix or you will have a chewy muffin.
  5. Add pecans or another nut of choice.
  6. Pour into muffin tin.
  7. Bake for 25 minutes or until top springs back when lightly pressed with the back of a spoon.
