Almonds… why I eat them every day

Almonds are a type of nut that are full of nutrients and should be eaten every day. They are full of healthy monounsaturated fats, protein and fiber. They are proven to reduce hunger and therefore help with weight loss. To get the full benefits of the antioxidants found in almonds which help prevent our cells from ageing and prevent certain diseases such as cancer, you need to eat the brown skin so don’t buy the white blanched almonds.

Almonds are also high in Magnesium which is a mineral that a large part of the population are deficient in. They can lower your blood sugar level as well as your cholesterol level.

I no longer buy industrial almond milk as I realised it is so easy to make, healthier and tastes even better than the store bought kind. You can use it with muesli, in coffee, to make porridge, in smoothies, or simply drink a glass of cold almond milk.

Creamy almond milk

Soak time: 8 hours        Prep time: 10 minutes

1 cup raw almonds

3 ½ cups water

1 tbsp pure maple syrup (or less if you can drink unsweetened almond milk)

½ vanilla bean (scrape seeds)

½ tsp cinnamon (freshly grated if possible)

Dash of fine sea salt

Directions:

  1. Place the almonds in a bowl and cover with water. Soak for 8 hours. Drain and rinse.
  2. Place the nuts and all of the other ingredients in a blender and mix on high for 1 minute.
  3. Place a nut milk bag (cheesecloth) over a bowl or a jug and pour the milk into the bag.
  4. Let sit for 3-5 minutes and gently squeeze the bottom of the nut milk bag to release the remaining milk.
  5. Using a funnel, transfer the milk into a glass jar or several mason jars and secure with the lid.
  6. Chill in the fridge.

The milk will stay fresh for 3-4 days. Shake before opening the jar.

Don’t waste the pulp, it is full of fibers! You can use it in smoothies, in cookies, in pancake batter etc. Keep it in the fridge for up to 2 days.

You can also make other nut milks with cashews, hazelnuts, walnuts, Brazil nuts or a mix of different nuts. You should always use a total of 1 cup of nuts.
